The Zen Smoothie

This is the smoothie I make when I'm stressed out from studying. It seriously calms me down and refuels me for the rest of studying.

Ingredients:
-0.5 cup spinach
-1 banana
-0.5 cup green tea (chilled so that the blender doesn't get damaged)
-0.5 cup coconut water
-1 orange

Blend and enjoy!

Pan grilled vegetable flat bread

Ingredients
0.5 cup mushrooms
0.5 cup red peppers
0.5 cup onions
0.5 cup spinach
1 cup tomato sauce
2 tbsp cheddar cheese (optional)
3.5oz gluten free pita (I used Aiden's brand)

Method:
-place pita in pan
-spread tomato sauce
-top with veggies
-grill for 15-20 min till cooked (medium heat- make sure it doesn't burn!)
Just a heads up: when u put it on the pan it seems like a ton of veggies but they shrink as u cook them.

Stuffed Peppers

Ingredients
-1 medium bell pepper sliced in half
-0.5 cup cooked quinoa
-0.5 cup beans (I used a mix of kidney and black beans)
-1 cup homemade salsa (tomatoes, onions, and any other veggies you have)
-1 tbspn mozzarella
-any other veggies you want to add
-spices ( I added garlic salt and paprika)

Directions:
-Mix the quinoa, beans, salsa and veggies together
-Cut the peppers in half and fill with the mix (you may have extra depending on size of peppers)
-Top with mozarella
-Bake at 350 degrees till the peppers get soft.

1tsp feta
1/4 avocado
1/4 cup kidney beans
4 grilled brussel sprouts
1 orange

Spicy Sriracha Salad

In the mood for a super spicy and delicious salad!?! Then this is what you're looking for!!

Ingredients:
2cups kale
Handful of cherry tomatoes
1/2 cup cooked quinoa
2 tbsp sriracha sauce
0.25 cup lentils
0.25cup diced zucchini
Handful pumpkin seeds
Some plain yogurt on the side (optional)

Directions:
Place kale on plate/in bowl
Mix sriracha sauce with quinoa and place in bowl.
Add in remaining ingredients and mix the salad.

Gluten-free Salted Caramel Chocolate Cupcakes


I saw similar cupcakes at prairie girl bakery the other day and decided I had to try to replicate them!
Didn't have time to make cupcakes from scratch, so took a few short-cuts, but tried to keep the ingredients as natural as possible! They were absolutely delicious!!

Ingredients:
-Bob's Mill Natural Gluten Free cake mix (or any chocolate cake mix)
-Natural caramel pudding mix
-1 pack of low fat philadelphia cream cheese (room temp)
-1 cup milk
-Himalayan Salt crystals

Method:
-Make cupcakes as directed! I decided to make mini cupcakes!
-To make the frosting beat the cream cheese with a mixer. Then once it is creamed, add in the box of caramel pudding mix. This will form a really thick bob of icing. Slowly add in the milk till you reach your desired consistency!
-Frost your cupcakes
-Garnish with crystals of Himalayan salt!

Apple Kale Smoothie

I love simple smoothies! I didn't have much in my fridge today, so just used up the kale and apples I had left! You can juice this, but I decided to just blend it!
Ingredients: Apple and kale (add maple syrup or agave is its bitter)
Blend and enjoy!
