Puffed Quinoa peanut butter balls

Ingredients
1 cup puffed quinoa
½ cup peanut butter
1 tbsp agave nectar or honey (optional)
1 tsp vanilla extract
vegan dark chocolate (optional)

Instructions:
-In a mixing bowl, combine the peanut butter, agave and vanilla.
-Add the puffed quinoa and stir to combine.
-Place mix in the fridge
-Then roll into 12 balls, and return to fridge for 15 min.
- can drizzle or dip with vegan chocolate if you want.

Green Energy Pancakes!

Ingredients:
-1 cup spinach
-1 cup vegan gluten free pancake mix
-1 cup almond milk
-1 tbsp maple syrup
-1 tbsp vanilla extract
-1 tbsp coconut flakes
Blend spinach and milk. Then add the rest of the ingredients.
Make like normal pancakes or on a waffle iron for waffles!

Day 28, 29, 30 Smoothie! Last days of 30day smoothie challenge!!

I knew the last few days were going to be super busy, so made a bunch of smoothies for Suhur in advance!
I know you guys have been asking for pictures, so i took one today!! lol

Ingredients: strawberry, blackberries, celery, beets, coconut water, greek yogurt and spinach!
Blend it up!!
This one was delish! Make sure the blackberries are sweet otherwise the smoothie will be bitter!
This month of ramadhan has been super fun because of all the cool breakfast/ suhur smoothies I have tried out!!

Day 27- Blueberry, lemon water

Today wasn't feeling hungry enough for a smoothie, so made a fruit water.

Put lemon slices and blueberry in cold water and left it in the fridge for a few hours.
Delish!
Make sure to squish the blueberries a bit before so you get good infusion of flavours!

Day 25- Blueberry, Orange, Vega smoothie

Vega powder is a really neat vegan protein powder! I like the all-natural flavor because it tastes least like stevia! Its great cuz it already has veggies in it, but I just add it to smoothies to give it a bit of a nutritious kick!

I love the combo of blueberry and orange. its delicious. And the Vega powder makes it like a meal!

Day 20- Strawberry watermelon greek yogurt smoothie

Ingredients:
-1 pint lemon flavored Greek yogurt
-2 cups watermelon
-1 pint strawberries

Blend it all together! Yum!

Day 11 smoothie- Mango, blueberry, cucumber smoothie

This smoothie is very refreshing!
Cut up the fruits and veggies and blend!
Keep the cucumber skin on for extra nutrition!
I put in a whole mango, 1/3 cucumber and handful of blueberries but surprisingly it didn't make too much smoothie, so I added water but it was delicious and filling!

Green Mango Salad

This salad was so yummy!
Ingredients:
-carrots
-cucumber
-red pepper
-mango
-lime
-spices

Cut all the veggies into thin strips. Mix and add a dressing of lime and red paprika.

Chocolate chip filled raspberries

One of my favorite things about summer is that raspberries are in season!!

For this super easy dessert you just wash and dry the raspberries and stuff each hole with a chocolate chip! I used semi-sweet chocolate chips, but any flavor works!! :)

Day 6 Smoothie- Blueberry orange

I've always loved the taste of blueberries and orange together!

Ingredients:
-1/2 cup blueberry flavored Greek yogurt
-1/2 orange
-1/2 banana
-1/2 cup spinach

Blend ingredients!! Add water to achieve desired consistency!

Day 3 Smoothie- Cinnabon-flavored Smoothie!

I've been seeing green smoothies everywhere- even starbucks sells them! Recently I've been trying to make green smoothies taste like dessert-- this time I tried a cinnabon-flavored green smoothie and here's the recipe!!! Hope you like it!

Ingredients
-4-5 small dates (2-3 if you are using large dates)
-1/2 cup almond milk (or any milk)
-1tspn maple syrup
-1 banana
-1 tspn cinnamon
-1 tspn vanilla extract
-1/2 cup spinach


Pop it all in the blender and voilaaa!!
Do not be alarmed by the green color (lol) I swear it tastes really good! If you dont like green smoothies, you can leave out the spinach and add a plant-based protein powder like vega natural to get your veggies in :)

Day 2 Smoothie- Nectarine carrot blueberry smoothie

So yesterday smoothie was a bit green, so thought I would add in a beet today. It gave it a nice color!

Ingredients:
-1/2 cup spinach
-1/2 cup frozen blueberries
-1 cup Rasberry yogurt
-1/2 beet
-1/4 cup carrots
-1 nectarine


Then blend it! My smoothie bottle is super convenient because I can attach my blender to it directly- no need to transfer from the blender to a cup/bottle!
So yummy! This is definitely one to try!

Day 1 Smoothie- Strawberry Avocado Smoothie

Didn't have too many fruits/veggies at home, so I just threw in whatever I had. It was pretty good!
Ingredients:
-1/2 cup spinach
-1/2 nectarine
-1/2 cup strawberries
-1/4 avocado
-1cup strawberry yogurt

Simply blend it all together!!

2 Ingredient Cookies!

So I just came across the most amazing, EASY AND HEALTHY cookie recipe!
The only two ingredients are:
1 banana
1 cup oats
(And then you can add raisins if you choose! But thats completely optional.)

All you do is:
1. Mix the banana and the oats together into a dough-like mixture
2. Make 12 little balls
3. Bake for 10 minutes on 350F!
4. ENJOY!

Spinach Snacks

Looking for a yummy snack for when you're on the go? These are great and can be frozen too!


Ingredients
-2 packs of thawed frozen spinach
-1 cup shredded cheese of your choice (I used mozzarella)
-4 eggs
-1.5 cups buckwheat
-0.5cup nutritional yeast
-1/4 cup chickpeas
-1/4 cup chopped cherry tomatoes
-1 tbsp garlic salt
-1 tbsp Nando's spice
-1/4 cup olive oil

Directions:
-preheat oven to 350
-combine all the ingredients
-roll into 2 inch balls
-place on baking sheet
-bake for 15minutes

makes about 30.

Mason Jar Salads!

Are you try to eat more nutrient-dense, whole foods, but dont have time to pack lunch every day?? I know I start off the week promising myself that I will prepare my lunch in advance, but by the end of the week I am so busy I end up buying food form the cafeteria or just grabbing a granola bar.
Enter Mason Jar Salads!
They're cute, leak-proof and you can keep them in the fridge for up to a week! Are you sold yet? And you can even put the salad dressing in advance without it getting soggy as long as you layer it properly. No more carrying around tiny containers of salad dressing!
Mason jars are great because you can make salad for the whole week on sunday and they wont go bad! No more scrambling to make lunch in the morning!!!

General Mason Jar format:
First (bottom) layer: quinoa or pasta and salad dressing
Second layer: Carrots (carrots are great because even if they touch the calald dressing they wont get soggy!
Third layer: beans or lentils
Fourth layer: heavy veggies (tomatoes, peppers, zucchini, celery, what ever you like)
Fifth layer: cheese, olives (optional)
Top layer: Spinach, Kale, Lettuce, Arugula

You can put in whatever you want, just make sure the heavy stuff goes in first and the salad dressing should be in the bottom layer so it doesn't touch the lettuce.

You can even do like themed salads: greek salad, italian, mexican etc. Mix it up so you dont get bored!
