Scrumptious Saturday salad!
Ingredients:
1.5 cups Baby spinach
1tsp feta
1/4 avocado
1/4 cup kidney beans
4 grilled brussel sprouts
1 orange
Sprinkled with sun dried tomatoes

Spicy Sriracha Salad

In the mood for a super spicy and delicious salad!?! Then this is what you're looking for!!

Ingredients:
2cups kale
Handful of cherry tomatoes
1/2 cup cooked quinoa
2 tbsp sriracha sauce
0.25 cup lentils
0.25cup diced zucchini
Handful pumpkin seeds
Some plain yogurt on the side (optional)

Directions:
Place kale on plate/in bowl
Mix sriracha sauce with quinoa and place in bowl.
Add in remaining ingredients and mix the salad.

Gluten-free Salted Caramel Chocolate Cupcakes


I saw similar cupcakes at prairie girl bakery the other day and decided I had to try to replicate them!
Didn't have time to make cupcakes from scratch, so took a few short-cuts, but tried to keep the ingredients as natural as possible! They were absolutely delicious!!

Ingredients:
-Bob's Mill Natural Gluten Free cake mix (or any chocolate cake mix)
-Natural caramel pudding mix
-1 pack of low fat philadelphia cream cheese (room temp)
-1 cup milk
-Himalayan Salt crystals

Method:
-Make cupcakes as directed! I decided to make mini cupcakes!
-To make the frosting beat the cream cheese with a mixer. Then once it is creamed, add in the box of caramel pudding mix. This will form a really thick bob of icing. Slowly add in the milk till you reach your desired consistency!
-Frost your cupcakes
-Garnish with crystals of Himalayan salt!

Apple Kale Smoothie

I love simple smoothies! I didn't have much in my fridge today, so just used up the kale and apples I had left! You can juice this, but I decided to just blend it!
Ingredients: Apple and kale (add maple syrup or agave is its bitter)
Blend and enjoy!

Layered Salad

Wanted to layer a salad, kind of like a trifle pudding! lol
This was an indian salad- inspired by "chaat".

Layer 1: chick peas + salad dressing
Layer 2: carrots
Layer 3: tomatoes, cucumber, avocado, sumac seed
Layer 4: spinach on top

Dressing: yogurt, water, ambli, sumac, salt, paprika
